Satay Kale for Breakfast!

Breakfast for me is  the hardest meal times for me. I never know what to eat in the morning, so I decided to try some sauteed kale! I thought this was a great and yummy dish to start my days especially with its amazing flavor and crunch. Also this is quick and easy!

1. Take a pan and put a little bit of coconut oil or olive oil, and place it on medium heat.
2. I used two sticks of kale for my dish, but use as much as you would like to consume. Then start ripping the leaves off, and chop up the stem for ease.
3. Drop the kale in, and toss it around in the oil.
4. Add some salt, paprika to taste.
5. Toss the ingredients in the pan some more, and then cover the pan. This will help steam the veggies up, and let that sit for a couple of minutes. Two to three minutes should be fine.
6. Uncover the pan and toss around the veggies some more, turn off the pan. Add in some malt vinegar and chia seeds, toss some more and cover the pan.
7. Let it rest for with the covered lid for another minute or two.
8. Uncover and plate, and enjoy!

Grandpa's Soup


This is my first attempt at soup. I have never made any soups before, and let me tell you that this is DELICIOUS! I call this Grandpa's Soup because I just thought its a fun name to name my dish.

What the dish has is potatoes, celery, squash, zucchini, tomatoes, and onions!

So lets get down to the actual cooking part!
Step 1: Get a big pot and fill it up with water, and set the heat to high.
Step 2: Wile the water is heating up, chop up your potatoes and set them aside. By the time I was done chopping all my potatoes, my water started to boil. I have used about 12 of these types of potatoes.
Step 3: Toss in your potatoes and then I added salt and pepper to taste.
Step 4: While the potatoes come to a boil, start chopping your celery sticks. Make sure you stir to get everything moving, especially with the addition of the salt and pepper. I used about a full wrack of celery, I just chopped off the butt of it and the ends of each stick. Once done chopping, I rinsed them off and threw them in after I drained them.
Step 5: Make sure to change your heat settings to medium high after you drop in the celery.
Step 6: Next I used half of my zucchini, which I sliced and then minced. Once done, toss it in.
Step 7: I did the same thing to my squash, only sliced it half way, minced it, and tossed it in. Now if your wondering what size was my squash, I usually buy the one that is around the same size as my zucchini.
Step 8: I took 3 tomatoes for my soup, and what I had done was, I sliced the top of the tomato off. Then I took a large bowl that would be comfortable for me to squeeze out the juice, and I started chopping up the inside and the outside up.
Once all three tomatoes are chopped, I tossed all that in.
Step 9: I took about 1/4 of an onion, and I sliced that up. They were fairly large flakes, but you can chop them to your own pleasure. 
Step 10: Once done, I tossed all that in. About this time, an hour has gone by once I tossed in the onions. I let the soup boil for 5 minutes. The aroma should be be strong and wonderful smelling, once you get used to it all, I turned off the heat and let it rest on the stove top. In about 10 minutes you should come back to something like this.
Step 11: Stir up, serve and enjoy Grandpa's Soup!

P.S. Do not forget to wash all the ingredients and stir in between steps!
